Hairy Crabs? I had never heard of them! Were they the same as the succulent Deadliest Catch crabs I was used to in the States? Not even close…. These are lake crabs, harvested along the Yangtze River delta and the eastern Chinese coastline. These delicate little crabs actually do have hair on them!
How to Eat. With the autumnal weather settling into Hong Kong from late October to early December, foodies are clamouring to get their hands on some hairy crabs. The first batch to be in season are the male hairy crabs, which have a more solid roe. The females ripen later and have a more runny roe. To tell the sex of the crabs, just flip them over and look at the bottom flap of their shells.
Lift flap on the underside of the crab. For female crabs, the flap is oval and for males, triangular. Remove the heart, which is white. Pry open the top shell and spoon out the bright orange roe inside.
